Ingredients (serves 4)
Marinade
- Onion garlic and ginger mix – 15g
- Bang's Tikka Masala spice – 20g
- Oil – a splash
Protein/Veg (1kg)
- Breadcrumbs – 75g
- Chicken thigh pieces – 800g
- Cherry tomatoes, halved – 100g
- Fresh coriander, chopped – 25g
Recipe
Step 1
Prepare the base
Soak the onion, garlic and ginger mix in tepid water for 10 minutes until light and fluffy. Mix with Tikka Bang spice, oil natural yogurt.
Coat and marinate the chicken for at least 30 minutes.
Oven cook until cooked through and lightly charred.
Step 2
Build the naanwich
Fill warm naan breads with hot or cold tikka chicken. Top with tomatoes, salad and fresh coriander. Finish with raita or sweet mango sauce.
Step 3
Make the Raita (Optional)
Whizz natural yoghurt, tamarind with fresh coriander and mint. Stir through finely diced cucumber.
Chef's Tip:
Roast the chicken on a tray in a single layer for better colour and flavour.
