Simple ingredients, serious flavour. The kind of thing people queue for at a market stall — grab one warm, eat it on the move. Plant-based street food you love, made in your kitchen.

Ingredients (serves 4)

Curry Sauce

  • Onion, garlic and ginger mix – 15g
  • Bang's Warm Moghul spice – 20g
  • Splash of oil

Filling

  • Potato, diced small – 600g
  • Frozen peas / mixed veg 200g

Recipe

Step 1

Prepare the base!

Soak the onion, garlic and ginger mix in 100ml tepid water for 5 min. Gently fry with a flavourless oil on a low heat until soft, golden and aromatic. Mix Warm Moghul spices with 50ml water to make a runny paste. Pour into the pan with the heated onion base and continue
heating gently until oil releases.

Step 2

Make the filling

Add potatoes and briefly increase the heat to seal the surfaces in the sauce. Add the frozen peas or frozen veg when the potatoes are almost done. Reduce to a simmer and cook to reduce the sauce. Leave to cool ready for filling your puff pastry. Roll out the puff pastry, fill, seal and bake!
