Ingredients (8-10 wraps)
Curry Sauce
- Onion, garlic and ginger mix – 15g
- Bang's Warm Moghul spice – 20g
- Chopped tomatoes – 100ml/100g
Vegetables and Pulses
- Sweet potato, diced – 400g
- Butter beans – 200g
- Chickpeas – 200g
- Coconut milk – 100ml
- Tortilla wraps / flat bread - pack
of 8 or 10
Recipe
Step 1
Prepare the base!
Soak the onion, garlic and ginger mix in 100ml tepid water for 5 min. Gently fry with a flavourless oil on a low heat until soft, golden and aromatic.
Step 2
Spice It Up!
Mix the Warm Moghul spices with a little water to form a runny paste. Pour into the pan with the onion base and heat gently until oils emerge from the mixture. Add the tomatoes and continue cooking until the oils separate. Stir in the sweet potato and pulses, reduce to a simmer and cook under a lid until tender. Finish with coconut milk and simmer until thick and creamy.
Step 3
Fill Roll and Serve!
Reduce the heat and allow the sauce to thicken until you have a thick, saucy filling. Load your wrap generously, add salad, and finish with a drizzle of natural yoghurt (optional) for freshness. Can be eaten hot or cold!
