Crisp, golden bhajis with real depth of spice. Lightly spiced and cooked until perfectly crunchy, these Bang Bhajis deliver familiar comfort with enough character to stand up on a professional menu.
Ingredients (makes 12)
- Bang's Classic Bangla spice – 13g
- Gram flour (gluten free) – 150g
- Onion, very finely sliced – 1 large
- Water – approx. 150g/ml
- Salt – to taste
Optional Extras:
- Baking powder – a pinch (for lighter bhajis)
- Fresh coriander, chopped – a handful
- Fresh chilli, finely chopped – 1 (optional)
Recipe
Step 1
Make the batter
Sift gram flour into a bowl and add Classic Bangla spice.
Gradually mix inwater to form a thick, smooth batter.
Season lightly with salt.
Step 2
Add onions
Stir sliced onion into the batter until well coated.
Add coriander and chilli if using.
Step 3
Cook
Spoon into hot oil and fry until golden and crisp.
Alternatively, shape and cook in an air fryer using a light oil spray.
Step 4
Make a Tamarind Chutney!
Whizz together natural yoghurt, tamarind, chilli and fresh coriander.
Season to taste and serve as a fresh dip alongside bhajis.
Chef's Tip:
Keep the batter thick to ensure crisp, well defined bhajis every time.
