1 large onion
Optional: a handful of fresh coriander for garnishing
Chop it!Finely slice the onion and chop the coriander or any herbs you have handy.
Spice it!Sieve the gluten-free besan (gram) flour. Mix in the Bang-bhaji spices and make a smooth batter with up to 150ml of cold water. Add the thinly sliced onion and coriander. Mix in and stir well! TOP TIP: Why not try using other ingredients in your bhajis? Sliced aubergine, peppers and spinach are exceptional in these snacks!
Fry it!Heat some oil in a pan until very hot. Fry spoonfuls of batter in the oil until crisp and golden. Rotate the bhajis for even cooking, this takes 3 to 4 minutes. A TIP ABOUT DEEP FRYING: To test the oil is hot enough, drop in a small amount of batter, this should rise to the top almost immediately. Use two tablespoons to scoop the batter gently into the oil.
