Madras curry originates from the Indian city of Madras. It is typically a spicy, bright red, tomato-based curry. This quick and easy Chicken Madras, comes together quickly, for a great weeknight meal.

Ingredients

500g-750g of chicken portions

20g pure butter ghee or unsalted butter

1/2 cup tomato puree

generous dash of cream or natural yoghurt

Directions

  • šŸ”„ STEP 1: In a bowl, soak the onion base with 100ml water. Leave it for 1min.
  • Keep on low heat for approximately 4 minutes until the mixture turns translucent.
  • šŸƒ Top tip: if you find the mixture sticking to the pan, add a splash of water.

  • šŸ”„ STEP 2
  • In a bowl, combine BANG!'s Madras Curry Kit with 50ml of water. Blend into a smooth, thick paste. Pour the paste into the pan and continue on a low heat for approximately 4 minutes. This will magically turn into your curry sauce! Dice the tomato and add to the sauce.
  • šŸƒ Look out for oils emerging from the mixture, then move onto step 3.

  • Add the marinated chicken and raise the heat for 3minute. Stirring constantly.
  • Add up to 150ml of hot water, lower the heat and simmer for 12 minutes.
  • Add to the pan - cover and cook for another 5-10 minutes on a low heat.
  • šŸƒ finish by garnishing with chopped corianderĀ into the curry and it’s ready for you to dig in!
