This cauliflower Gobi recipe is a popular restaurant dish and all round favourite no Indian meal should go without!

Ingredients

3 carrots, peeled and cubed

1 small cauliflower, separated into florets (400grams) - blanched for 1 minute

1 red onion

3 cloves of garlic

1/2 inch of fresh ginger

Directions

šŸ”„ STEP 1 - Finely chop the onion and finely grate the garlic and ginger. Gently fry in a pan with a splash of oil. Keep on a low heat for approximately 4 minutes until the mixture turns translucent.
šŸƒ Top tip: if you find the mixture sticking to the pan, add a splash of water. šŸ”„ STEP 2 -
  • In a bowl, combine BANG!'s spices with 50ml of water. Blend into a smooth, thick paste. Pour the paste into the pan and continue to simmer on a low heat for approximately 4 minutes. Watch this turn into your curry sauce! For an even richer sauce, add quartered cherry tomatoes or half a can of tinned tomatoes.
  • šŸƒ Tip tip: look out for oils emerging from the mixture, then move onto step 3.
  • We've used ourĀ Warm Moghul mild flavour Ā which pairs beautifully with cauliflower and carrots.
Ā  šŸ”„ STEP 3 -
  • Add the blanched cauliflower and cubed carrots, stirring into the curry sauce under a raised heat for 3 minutes.
  • Add up to 100ml of hot water and leave to simmer for 10 minutes.
  • Cook for a further 10 minutes under a closed lid.
  • Finally, enjoy with flat breads or rice!
