Zesty Beet Dip
An exotic combination of beetroot, lemon and pomegranate mixed with a light yoghurt - give your taste buds a pleasant surprise!
- 2 tablespoons coarsely mashed ripe baby beetroot
- Zest of half a lemon
- 2 tablespoons of pomegranate
- 250 gm natural or greek yoghurt
- 1/4 teaspoon ground cumin
- pinch of salt
- Spoon 250 gm of yoghurt in a bowl. Add salt and ground cumin.
- Swirl in mashed baby beetroot in the mixture.
- Garnish with zesty lime and pomegranate and voila!
- Try it with warm pita, flatbreads, crackers, or naan breads.
